chocolate chips





Ingredients:
1/2 cup (1 stick) unsalted butter, softened
1/4 cup cream cheese, softened (use cream cheese in a block or spreadable, don't use fat-free, light or whipped)
3/4 cup light brown sugar, packed
1/4 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/4 teaspoon salt, optional and to taste
2 1/4 cups semi-sweet chocolate chips or chunks (I used 1 cup chips and 1 1/4 cups chunks)
Directions:

To the bowl of a stand mixer fitted with the paddle attachment, combine the butter, cream cheese (measure it by smooshing it into a 1/4-cup measure), sugars, egg, vanilla, and beat on medium-high speed until well-creamed, light and fluffy, about 5 minutes (or use an electric hand mixer and beat for at least 7 minutes).
Stop, scrape down the sides of the bowl, and add the flour, cornstarch, baking soda, optional salt, and mix until just combined, about 1 minute.
Add chocolate chips and chunks, and beat momentarily to incorporate, or fold in by hand.
Using a medium 2-inch cookie scoop, form heaping mounds (I made 28). Place mounds on a large plate, flatten mounds slightly with your palm, cover with plasticwrap, and refrigerate for at least 2 hours, or up to 5 days, before baking. Do not bake with warm dough because cookies will spread and bake thinner and flatter.
Preheat oven to 350F, line a baking sheet with a Silpat Non-Stick Baking Mat or spray with cooking spray and place mounds on baking sheet, spaced at least 2 inches apart (I bake 8 cookies per sheet). Bake for 8 to 9 minutes, or until edges have set and tops are just beginning to set, even if slightly undercooked, pale and glossy in the center. Do not bake longer than 10 minutes as cookies will firm up as they cool (The cookies shown in the photos were baked with dough that had been chilled overnight, allowed to come to room temp for 15 minutes, and were baked for 8 minutes, with trays rotated at the 4-minute mark. They have chewy edges with soft, pillowy centers). Allow cookies to cool on the baking sheet for 5 minutes before removing and transferring to a rack to finish cooling.
Cookies will keep airtight at room temperature for up to 1 week, or in the freezer for up to 3 months. Alternatively, unbaked cookie dough can be stored airtight in the refrigerator for up to 5 days, so consider baking only as many cookies as desired and save the remaining dough to be baked in the future when desired.

Vanilla Cupcakes with Rose Butter Icing

Vanilla Cupcakes with Rose Butter Icing
Makes: 12
Preparation time: 45 minutes, plus drying time
Cooking time: 20 minutes
You will need 
For the cupcakes:
175g caster sugar
175g unsalted butter
3 large eggs, separated
175g self raising flour
175g plain cooked (vacuum packed) beetroot, drained (hold a few drops of juice back to use as colouring) and pureed
1 tbsp vanilla extract 
For the icing:
300g Icing sugar
150g unsalted butter, slightly softened
A few drops rose flower water, to taste
A few drops beetroot juice, to colour
For the crystallized rose petals:
3 pink roses, separated into petals
1 egg white
Caster sugar (a sprinkling)

Method
1. Make the crystallized rose petals the day before you want to serve the cupcakes. They will keep in an airtight box for a few weeks. Lay out a piece of silicon-coated baking paper on a tray. Pick through the petals and choose the 12 loveliest looking ones and lay them on the tray. Brush gently with egg white and sprinkle all over with caster sugar. Allow to dry in a warm place for eight hours before using.
2. When you are ready to make the cupcakes, preheat the oven to 180˚C/356˚F/gas mark 4.
3. Blend together the sugar and butter until light and creamy. Add the egg yolks, flour, pureed beetroot and vanilla and beat until smooth.
4. In a clean bowl whisk the egg whites until fairly stiff. Take a large spoon of egg white and beat into the cupcake mixture to loosen it a little. Then, using a large metal spoon fold the remaining egg whites gently through the mix, taking care not to over beat.
5. Spoon the mixture into 12 cupcake cases and bake in the oven for around 20 minutes, or until the cakes are firm to the touch. Remove and cool on a wire rack.
6.To make the icing, beat the icing sugar and butter together, either in a food mixer or by hand with a wooden spoon. Add a few drops of rose flower water to taste, and a few drops of beetroot juice to colour the icing.
7.Spread generously or pipe over the cooled cupcakes and top each with a rose petal.

These shortcakes are so good, I almost ate 2 of them right out of the oven, without any strawberries, because they tasted like huge, puffed up, and soft chocolate chip cookies:

Ingredients
  • Strawberries:
  • 2 pounds fresh strawberries, hulled and cleaned, sliced
  • 2/3 cup sugar, or more
  • whipped cream
  • Shortcakes:
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold
  • 1 cup milk
  • 1/3 cup chocolate chips, plus extra - for topping
Instructions
    Strawberries:
  1. Combine sliced strawberries and sugar in a large bowl and mix together. Let the strawberries sit in sugar for a bit to bring out their juices and form a very yummy syrup.
  2. Shortcakes:
  3. Preheat the oven to 400 F. Line a baking sheet with parchment paper.
  4. In a food processor, combine and process flour, sugar, baking powder, and salt. Chop cold butter in small cubes, add to the food processor and process until the mixture resembles coarse meal. Add milk, and pulse a few times just until combined. Turn off the food processor, remove the blade, then, using spatula, fold in chocolate chips, avoiding to handle the dough too much.
  5. Move the dough onto a lightly floured surface. With floured hands, divide the dough into 6 or 8 equal portions, and drop the dough in small flattened balls on the prepared baking sheet.
  6. Bake the shortcakes for about 15-20 minutes, until the tops turn golden-brown. For decorating purposes, after 10 minutes of baking, remove the baking sheet from the oven and carefully place extra chocolate chips on top of each shortcake, lightly pressing the chips in so that they remain on top (which already gets crusty) and don't fall off - and then, return the baking sheet to the oven, and continue baking for the remaining amount of time.
  7. Assembly:
  8. Let the biscuits cool. Using serrated knife, slice each biscuit in half. To serve, place the bottom side of biscuit on a serving plate, top with strawberries, then whipped cream. Place the top side of the biscuit on top, then add more cream or strawberries or both! Sprinkle a few chocolate chips over the each serving.

Crepes with ricotta cheese filling and pears
Ingredients:

  • gluten free crepes (use this link if you’re gluten intolerant)
  • 1/2 cup ricotta cheese
  • 1 tablespoon agave nectar
  • 2 pears, cored and sliced
  • 2 tablespoons butter
  • 2 tablespoons honey
Makes 4 servings (4 crepes topped with pear mixture on top)
1) Heat ricotta cheese and agave nectar in a small skillet on medium-high and keep mixing it until the mixture becomes liquid and of even consistency. Remove from heat and let it cool. Once it cools a bit, the mixture would become more solid, which is what we want.
2) In a separate medium size pan, heat 2 tablespoons of butter on high heat. Add sliced pears to the butter, close the pan with the lid and let it cook on high for about 5 minutes. After 5 minutes, flip sliced pears on the other side, close the pan with the lid and let it cook on high for another 5 minutes. Remove from heat. Depending on how hot your stove gets, it might take you less or more time, the key is to brown the pears or even get a slightly “burned” effect. But don’t over-do it, and once pears have this “roasted” appearance. Once you removed the pan with pears from the heat, immediately add honey to the pears – adding honey will make pears sizzle and will caramelize them beautifully, off heat.
3) To serve: add 2 tablespoons of agave-ricotta cheese mixture on top of the open crepe, fold the crepe in half, then fold it one more time to form a triangle. Pour hot mixture of honey, butter and pears on top. Ready to serve!

  • 4 medium apples, cored and sliced, length-wise
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 1/2 cup ricotta cheese
  • 1 tablespoon agave nectar
Makes 6 servings (6 crepes topped with pear mixture on top)
1) Place sliced apples into a large bowl, add sugar, cinnamon, lemon juice and mix. Let apples sit for about 15 minutes to release juices.

Depending on how hot your stove gets, it might take you less or more time to cook apples, the key is to brown them or even get a slightly “burned” effect. But don’t over-do it, once the apples have this “roasted” appearance. Right after you remove the pan with roasted sliced apples from the heat, immediately add honey – it will make apples sizzle and will caramelize them beautifully, off the heat. Then, add all other juices from the bowl.
3) In a separate, small skillet, heat ricotta cheese and agave nectar and keep mixing it until the mixture becomes liquid and of even consistency. Remove from heat and let it cool. Once it cools a bit, the mixture would become more solid, which is what we want.
4) To serve: add 2 tablespoons (or less) of agave-ricotta cheese mixture on top of an open crepe, fold the crepe in half, then fold it one more time to form a triangle. Pour hot mixture of honey, butter and caramelized apples on top. Ready to serve!

Ferrero Rocher Cupcakes

Ultimate guide to saving your gorgeous Ferrero Rocher Cupcakes alive during the preparation time :)

This time the danger was triple because Ferrero Rocher balls were supposed to be saved (I really don't know a person who doesn't love them) and after that beautiful Chocolate Nutella Frosting, and in the end, the finished Ferrero Rocher Cupcakes should stand at least a little while in the fridge.
Ingredients
For Chocolate Cupcakes:
1 cup all-purpose flour
¾ cup sugar
1 teaspoon baking powder
½ teaspoon salt
½ cup cocoa powder
¾ cups vegetable oil
½ cup buttermilk
1 egg
1 teaspoon vanilla extract
12 Ferrero Rocher


For Chocolate Nutella Frosting:
1 cup powdered sugar
½ cup unsalted butter
¼ cup cream cheese
⅓ cup Nutella
4 oz semisweet baking chocolate
2 Tablespoon cocoa powder
pinch of salt
½ tespoon vanilla
Instructions
Preheat the oven to 350 degrees F, and line standard cupcake pan with paper liners.
In a large bowl whisk together flour, sugar, cocoa, baking powder and salt.
With electric mixer beat together oil, egg, buttermilk and vanilla extract on medium speed until well combined.
Add dry ingredients and mix well to combine.
Cupcake liners should be about ⅔ full. First add about 1 tablespoon of the batter, then place unwrapped Ferrero Rocher in each cup and add remaining batter.
Bake until a toothpick inserted in cupcake comes out clean (it takes about 16-20 minutes)
Wait the cupcakes to cool completely before icing
To make the frosting melt 4 oz chocolate and let it cool to a room temperature.
Beat the butter and sugar until it’s light and fluffy, then add cream cheese and mix well.
Add vanilla, salt, Nutella,cocoa and melted chocolate and mix it well to combine evenly.
Set the frosting in the fridge for 15 minutes to set, then frost the cupcakes and garnish with Ferrero Rocher.
